Pumpkin Honey-Oat Whole Wheat Chocolate Chip Cookies!

Welcome Pumpkin Season! I think that’s what I’m going to call it now instead of fall. Pumpkin Season sounds more appropriate. Last year I was so done with the pumpkin craze that I just decided to boycott pumpkin flavored everything. Just because it annoyed me. This year, I’m giving in. The other day when I went grocery shopping, without having an plan as to what I was going to be making, I bought six cans of pumpkin puree out of pure excitement for the season to begin! So far I’ve made pumpkin waffles, pumpkin muffins, and now pumpkin honey-oat whole wheat chocolate chip cookies! (Yes I know it’s a mouthful, but so are these cookies). These didn’t exactly go along with our low sugar diet so I ended up bringing them to work the next day to get rid of them and trust me, I didn’t have to ask. The entire plate was gone after our 10:45 am staff meeting. These were that good.

Super easy and  quick to make, and the cookie dough stays together so well! These cookies didn’t run at all while they were baking! I hate super flat cookies. I turn my nose up at them. These were not those cookies. I think one of the praises I heard the most was that these cookies were not over-the-top sweet. The chocolate chips give them a really nice bit of sweetness without making you feel like you need to brush your teeth after eating. Over all, this recipe is an A+. Tell your friends!
