Welcome Pumpkin Season! I think that’s what I’m going to call it now instead of fall. Pumpkin Season sounds more appropriate. Last year I was so done with the pumpkin craze that I just decided to boycott pumpkin flavored everything. Just because it annoyed me. This year, I’m giving in. The other day when I went grocery shopping, without having an plan as to what I was going to be making, I bought six cans of pumpkin puree out of pure excitement for the season to begin! So far I’ve made pumpkin waffles, pumpkin muffins, and now pumpkin honey-oat whole wheat chocolate chip cookies! (Yes I know it’s a mouthful, but so are these cookies). These didn’t exactly go along with our low sugar diet so I ended up bringing them to work the next day to get rid of them and trust me, I didn’t have to ask. The entire plate was gone after our 10:45 am staff meeting. These were that good.
[amd-yrecipe-recipe:13]Super easy and quick to make, and the cookie dough stays together so well! These cookies didn’t run at all while they were baking! I hate super flat cookies. I turn my nose up at them. These were not those cookies. I think one of the praises I heard the most was that these cookies were not over-the-top sweet. The chocolate chips give them a really nice bit of sweetness without making you feel like you need to brush your teeth after eating. Over all, this recipe is an A+. Tell your friends!

I’m going to work on these today or this week. They will fit right into my pumpkinchallenge of eating something pumpkin everyday this month. Did you grind up your oats or leave them whole?

I left the oats whole for this one. I think they would absorb too much moisture if I ground them, plus I kind of like the chunky feel to these. Feel free to experiment tho!

Never apologize for buying too many things! I keep my cabinets well stocked so when the need arises I am fully stocked and ready to go. Especially with canned goods! That’s being a good scout! Always prepared! I am going to use some of my pumpkin to make these awesome cookies!
