So even though it’s mid October here, it’s still just starting to get cold (and by gold I mean 55 degrees…). I’m sitting here with my PSL and cardigan like “HELLO!!! It’s October for goodness sake!” I’m ready for red and yellow leaves, everything pumpkin, dark red lipstick, and a whole lot of other fallish things (see my post 25 Fall Activities for Families, Friends, and Couples).
In my urge to make fall come a little sooner, I did a little dance, lit a pumpkin pie candle, and made this soup. I think the soup may have done the trick because I am spooning it in my mouth as I speak and it’s feeling pretty autumn up in here (yes, “autumn” is an adjective now).
This soup was, of course, made in my crock pot this morning before I left for work. How did I manage that with having to feed the baby, wash my hair, AND get to work by 8:30? Because this was superbly easy, that’s why.
Here’s how you make this wonderful blessing of a soup:

I make a lot of carrot ginger soup but this looks like something I’ll definitely need to try.
That sounds really yummy! For whatever reason, I always make the same three soups, but I want to try all different kinds. And fall in a bowl cannot be a bad thing 😉
Yum! I’m always looking for new soup recipes. I love sweet potatoe so this one I will be trying 🙂
This sounds delicious! I am a soup making machine as soon as September hits but I don’t have a regular sweet potato recipe I go to. I’m looking forward to making this.
Hmm.. may have to try this. I love the crock pot and next month on my blog I’m featuring sweet potatoes!
Fall and winter is soup season for me. Sweet potato, apple and carrot soup sounds like a delicious combo.
That sounds good! Def going to pin this!
