I had originally planned on making making this dish in the crock pot for dinner tonight but my husband, to whom I drive dinner every night while he’s at work, told me that he forgot to pack a lunch today and would be needing dinner to come earlier. So I decided to skip the crock pot and stick this baby in the oven. Never making this dish before, I was unsure how long to keep it in the oven; so after 15 minutes I kept a close eye on it and 25 seemed to do the trick!
This made for a great weeknight dinner that I was able to prepare and get in the oven all within baby’s nap time! That’s a winner for me. This chicken enchilada casserole is light (not loaded down with lots of carbs) and also colorful and pretty when it comes out of the oven which made it hard for me to wait until I met up with Josh to take the first bite!

Best of all I was able to get dinner to Josh a bit earlier (even on short notice). I think this recipe passes the weeknight dinner test!
